Pasta with Sausage, Tomatoes and Cream
This hearty pasta dish is quick to put together, making it an excellent weeknight meal option. We used sweet Italian sausage, but you can use spicy sausage if you want to add more heat.

COOK TIME: 15 minutes
1 tablespoon olive oil
1/2 pound sweet Italian sausage, crumbled
1/4 teaspoon crushed dried red pepper flakes
1/4 cup yellow onion, minced
2 cloves garlic, minced
1 (14 1/2 ounce) can Italian plum tomatoes, drained and crushed
3/4 cup whipping cream
1/4 teaspoon salt
6 ounces pasta (we used Fettuccine, but you can also use linguine or spaghetti)
Chopped basil and grated parmesan, for garnish
Heat oil in a large skillet over medium heat. Add sausage and crushed red pepper and cook until sausage is no longer pink, stirring frequently, about 5-7 minutes. Add onion and garlic to skillet and cook until onion is tender and sausage is light brown, stirring occasionally, about 7 minutes. Add tomatoes, cream, and salt. Simmer until mixture thickens slightly, about 4 minutes.
While you are preparing the sauce, cook pasta according to package directions.
To assemble, put pasta on a serving plate and top with sausage mixture. Garnish with basil and parmesan.
