Macaroni and Beef

Big on flavor and economical to make, this classic comfort food dish is a treat for both children and grown-ups alike. Serve with a green salad for a satisfying dinner. This recipe makes 8 servings.

PREP TIME: 20 minutes
COOK TIME: 40 minutes

Ingredients
1 pound of dry macaroni noodles (or similar)
1 pound lean ground beef
2 cloves garlic, minced
1 medium yellow onion, diced
1/2 bell pepper, diced
1 28-ounce can crushed tomatoes
1/2 cup tomato sauce
3 tablespoons tomato paste
1/2 teaspoon dry basil
3 cups shredded cheddar cheese , divided
1/4 cup freshly shredded parmesan cheese
Salt and pepper, to taste

Directions
Preheat oven to 375F.

Cook noodles until very al denté, approximately six minutes. Drain and rinse under cold water.

While the noodles are cooking, brown beef, garlic and onion in a frying pan. Drain off excess fat.

Combine green peppers, beef, noodles, tomatoes, tomato sauce, tomato paste, basil, salt and pepper and 1 cup of cheddar cheese. Pour into a 9×13 casserole dish.

Combine remaining cheeses and sprinkle on top of casserole. Bake uncovered for 35-40 minutes or until bubbly and cheese is browned. Serve right away.
