Classic Creamed Spinach

This steakhouse favorite is one of our favorite holiday sides, and we made this version super decadent buy adding a bit of chopped bacon. Looking for a way to get some greens into your kids? Look no further!

PREP TIME: 10 minutes
COOK TIME: 20 minutes

1/2 cup unsalted butter
1/2 cup flour
1/2 yellow onion, finely chopped
3 cloves garlic, minced
2 cups whole milk
1 pinch ground nutmeg
6 cups baby spinach, rinsed and dried
3 slices cooked bacon, chopped
Salt and pepper, to taste

Melt 1 stick of butter in a medium stock pot. Add flour and whisk constantly until combined. Cook over medium heat for five minutes or until light golden brown. Add onion, garlic and nutmeg and whisk together. Add milk, whisking constantly, and cook for another five minutes until sauce thickens. Add spinach and cook until spinach is wilted. Season with salt and pepper to taste and serve immediately.
