Beet, Goat Cheese and Caramelized Onion Flatbread

These nifty and flavorful flatbreads make a great snack, light lunch, or holiday party appetizer. We kept it simple with the toppings, but you can experiment with thinly sliced apples or pears, sun-dried tomatoes or butternut squash, if you like. This recipe makes two flatbreads.

PREP TIME: 5 minutes
COOK TIME: 10 minutes

Ingredients
2 store-bought flatbreads or plain flavored naan
6-8 ounces goat cheese, crumbled
1/2 sweet onion, very thinly sliced
1 small beet, very thinly sliced
Leaves from 1 small sprig fresh rosemary, for garnish
Non-stick cooking spray

Directions
Preheat your oven to 375 F and make sure your oven rack is in the middle of the oven. Place flatbreads or naan on a large baking sheet that you have sprayed with cooking spray; this will help the bread crisp up in the oven. Arrange goat cheese, then onion and beets on top of the flatbreads, distributing evenly. Spray again lightly with cooking spray.

Bake for 7-10 minutes or until the cheese has softened and the bread is browning on the edges. Remove from oven, garnish with rosemary leaves, slice and serve immediately.
