All Day Long Breakfast Scramble

Fill up for the better part of the day with this flavorful breakfast scramble. Loaded with protein-rich eggs and savory sausage, this dish will see to it that you get through the afternoon without missing a beat! This recipe can easily be modified for veggie-lovers; replace the sausage with some additional sliced mushrooms and bell peppers. This recipe makes two servings.

PREP TIME: 10 minutes
COOK TIME: 30 minutes

Ingredients
2 medium-sized yellow potatoes, washed and cut in half
3 ounces sweet or spicy Italian sausage, crumbled
1/2 medium yellow onion, chopped
1/2 bell pepper, seeded and chopped
6 ounces mushrooms, brushed clean and sliced
3 large eggs
1 tablespoon olive oil or butter
Splash of milk
Salt and pepper, to taste

Directions
Bring a small pot of water to a boil and salt liberally. Add potatoes and boil for 5-6 minutes, until potatoes can be pierced with a fork but are not mushy. Drain and set aside to cool. Once potatoes can be handle, cut into 1/2" dice.

Heat a large skillet to medium-high. Add butter or oil, mushrooms, peppers and onions. Sauté for 6-8 minutes, until onions become fragrant and mushrooms begin to release their water. Add sausage and potatoes; cook for 5 minutes more, or until sausage is cooked through and potatoes are beginning to brown.

Crack eggs into a mall bowl, add milk and whisk with a fork. Add eggs to the potato mixture and cook for 3-4 minutes, until eggs are cooked and set. Season with salt and pepper. Serve immediately.
