Onion and Pepper Tortilla Pizzas
These tasty pizzas are a snap to prepare and make a satisfying lunch or after school snack for the kiddos. We've kept the ingredient list simple in our version; feel free to add what ever chopped veggies you like. This recipe makes 2 pizzas.

Onion and Pepper Tortilla Pizzas
Ingredients
2 10-inch flour tortillas
2 tablespoons store-bought pizza or marinara sauce
1/2 bell pepper, cored, seeded and thinly sliced
1/2 red or yellow onion, thinly sliced
4 ounces shredded jack or Mexican-blend cheese
Nonstick cooking spray
Directions
Preheat your oven to 400 F.

Place tortillas on a large baking sheet. Spoon sauce over tortillas, distributing evenly amongst the tortillas. Add onions, pepper and cheese.

Bake for 10-14 minutes, until the pizzas become slightly browned on the bottom and the cheese is melted and bubbling. Remove from oven, let stand for a few minutes, slice and serve.
