Mushroom and Red Onion Flatbread
These zippy little flatbreads are a snap to throw together with a few store-bought ingredients and make a great after-school snack. We kept the ingredients simple for our version; feel free to swap in whatever veggies you like. This recipe makes 2 flatbreads.

Mushroom and Red Onion Flatbread
Ingredients
2 store-bought flatbreads or naan
8 ounces shredded Mozzarella cheese
4 tablespoons store-bought pizza or marinara sauce
4-6 white mushrooms, brushed clean and sliced
1/2 small red onion, very thinly sliced
Directions
Preheat your oven to 425 F. Place bread or naan on a large baking sheet. Top with sauce, cheese, onions and mushrooms, distributing evenly on two breads. Bake for 7-10 minutes, or until cheese is golden and bubbling and breads are slightly crispy. Remove from oven, slice and serve.
