Easy Turkey Burritos
Crunchy and loaded with protein and fiber, these burritos are a snap to prepare and make an easy lunch or dinner. This recipe makes 4-6 burritos.

Easy Turkey Burritos
Ingredients
4-6 12" flour tortillas
1 pound ground turkey
1 red bell pepper, seeded cored and sliced
1 8-ounce can kidney beans, rinsed and drained
1 white onion, thinly sliced
1/2 cup corn kernels
Handful of freshly chopped cilantro
1 tablespoon olive oil
Salt and pepper, to taste
Store-bought Mexican hot sauce
1 avocado, pitted, peeled and sliced
Directions
Heat oil in a large skillet to medium-high on the stove top. Add turkey, making sure to break up the meat into mite-sized chunks with a spatula. Season with salt and pepper. Cook until the turkey is no longer pink and the juices run clear; about 7-10 minutes. Remove from heat.

To assemble the burritos, place a tortilla on your work surface. Add a scoop of turkey. Layer on some bell pepper, onions, beans, corn, cilantro, hot sauce and avocado. Wrap and serve.
