Onions are low in calories yet add abundant flavor to a wide variety of foods. With an average of only 45 calories per serving, onions are free of fat and cholesterol, very low in sodium, high in vitamin C, and a good source of fiber. As with almost any fruit or vegetable, the maximum nutritional benefit is attained by eating them raw, lightly steamed or sautéed.
Onions contain chemicals which help fight the free radicals in our bodies that can cause cell destruction and disease and have been linked to numerous illnesses. The organosulfur compounds in onions help increase circulation, lower blood pressure, and prevent blood clotting as well as detoxify the body and skin
They also contain generous amounts of a flavonoid called quercetin, a potent antioxidant, and they contain anti-allergy, antiviral and antihistamine properties. Studies have shown that quercetin protects against cataracts, cardiovascular disease, and cancer. Other sources are tea and apples, but research shows that absorption of quercetin from onions is twice that from tea and more than three times that from apples.
